Kathleen’s Buffalo Chicken Panini


  • 1 Pound of Chicken Breast Tenders
  • ¼ Cup Peggy’s Wing Sauce – Hot, Medium or Mild
  • ¼ Cup Crumbled Blue Cheese
  • ½ Cup Baby Spinach
  • 4 Ciabatta Rolls
  • 8 Tablespoons Buffalo Ranch – (3 Tbs of Peggy’s Wing Sauce & 5 tbs. of Buttermilk Ranch dressing)
  • Optional: Top with diced celery and carrots. Serve with a side of coleslaw


  • Cook chicken, grill or broil the chicken until it is cooked through.
  • Preheat closed contact grill or panini maker 5 minutes.
  • Spread Buffalo Ranch on the inside of your rolls
    Assemble sandwich layering chicken blue cheese crumbles (optional carrots and celery) and spinach.
